this was my first time ever cooking chickpeas and it turned out amazing. this recipe is super simple and i was eating in less than 20 minutes!

tahini dressing (recipe below)
add chickpeas to a pan on stovetop over medium heat (would be wonderful roasted in the oven as well)
add spices and a bit of oil (i used olive oil)
stir to mix
let it sit for a few minutes
stir some more
remove from heat
while the chickpeas cool, sprinkle some spinach on your pita
add chickpeas to the pita
top with sliced avocado
drizzle tahini dressing
i did not use much oil and i removed my chickpeas from the heat when they started to stick to the pan. since they were canned, i really just wanted to warm them up and dry them out a little.
mix ingredients below in a small bowl, adjust spices to taste
splash of lemon juice
splash of water (use more or less depending on desired consistency)
i loooved this. it was almost too easy and it was super filling. as with any recipe, anything i used can be subbed/added (i used only what i had on hand!). next time i will add red onion as i felt it was missing some crunch.
